Whole Foods Finds

First of all run, don’t walk, over to Whole Foods and pick up some of these tasty So Delicious Coconut Milk Minis. They are a perfect after dinner dessert.

Also, they are now carrying  Tofurkey Pizzas. We haven’t tried it yet but from what the Internet is saying they are pretty good. They have them cheese, pepperoni, and sausage.

We’ll do a quick write-up later this week.

Daiya Cheese Quesadillas

The last real quesadilla I had was from Taco Bell back sometime in early 2000. We had tried quesadillas at home using the Follow Your Heart cheese but the taste wasn’t quite there.

We had bought a bag last time we went shopping to use in refried beans and to add to our tacos. When I was looking in the fridge to see what I could whip up Mrs. Working Vegan for lunch I spied the bag and a light bulb went off in my head, Quesadaillas!

The method I used was placing the flour tortilla on a dinner plate adding the Daiya and folding the tortilla in half and microwaving it for 15 seconds. I then placed it on a non-stick pan that I had preheated on medium high. About 15-20 seconds on each side and ta-da, a quesadilla is born.

Give it a try for a snack or for dinner. Next time I think we’ll mix the mozzarella with the cheddar and see how that tastes.

Casa de Tamales – Finally

Hello all. Sorry for the lack of updates. Its been hectic at the Working Vegan household with a new addition to our family.

We finally had a chance to pick up Casa de Tamales for lunch. We ordered the Portabello and Asparagus tamale and the Soy Chorizo and Potato tamale.

They were great! So great in fact that I didn’t get a chance to take any pictures.

The rice and beans are also vegan.

Taco Bell

Its not pretty, its not the best tasting, but it’ll do in a pinch.

We were out of Vegan Slices for my sandwich so I decided to just do fast food for lunch.

My usual order is a 7-Layer Burrito without sour cream, and cheese, a side of rice, and a side order of potatoes.

Whats do you order thats vegan / veganized at Taco Bell?
